Meatloaf Madness

I'm about to share with you my favorite meatloaf recipe of all time. I've been using it for about 7 years now, and I've had people who don't even like meatloaf tell me how good it is. Preheat your oven to 425 degrees and have the following ingredients on hand:

1 lb of sausage
1 lb of ground hamburger
1 package of french onion soup mix
1 package of crackers crushed
2 eggs

I switch some of my ingredients around depending on what I have on hand. Start out by combining your sausage and hamburger in a large bowl. Begin working in your onion soup and crushed crackers. If you don't have any crackers on hand try using dried breadcrumbs or last week I used some plain oatmeal because I didn't have crackers or dried bread crumbs. Add in your eggs last and mix the meat mixture with your hands until thoroughly combined.

Add the mixture to your baking dish as shown above and bake at 425 degrees for about 40 to 45 minutes. Enjoy!

Whole Wheat Honey Rolls

Here is a recipe I modified for dinner rolls. I use my handy dandy kitchenaid mixer for whatever I can, but you can always make recipes by hand, just be prepared to use a little bit of muscle and elbow grease :). They taste great and are full of good stuff from the whole wheat and honey. Start by getting 1 and 1/2 Cups of warm water and 2 packages (or 4 and 1/2 teaspoons) of yeast. Let stand in your mixing bowl for about 10 mins. Add 1/2 cup of Honey and 3 Tablespoons of shortening and turn on your mixer. Add 2 eggs and 1 and 1/2 teaspoons of salt. I also add ground flaxseed to just about every bread I make. In this recipe I added 2 Tablespoons of ground flaxseed and well as 2 Tablespoons of dough enhancer (also optional). Turn off mixer and add the dough hook attachment. Begin to add flour one cup at a time. You will probably use between 4 and 5 cups of flour and your dough should be clinging to the dough hook and picking up from the sides of the bowl. Add the last two cups slowly as the flour will absorb the liquid if you give it time. After mixing remove dough to a large bowl and knead with your hands just a little bit. I like to grease the dough with a little bit of oil before I let it rise.

Cover the dough and set in a warmed oven or on top of a warm stove. Make sure to keep it free from drafts and let rise until doubled in size. Repeat this process one more time and then take pieces from the dough and form balls. You can also cut the dough into fours which will make them pull apart neatly after baking

This should make about 12 fairly large dinner rolls. You could make smaller ones and probably get double the amount. Let them rise for about 20 mins or so and bake at 400 degrees for about 13 to 15 mins. Enjoy!!

Hello All!

I've decided to start this blog so that I can share my thoughts, ideas and recipes. A little about me....I'm 28 and my boyfriend and I have one, rambunctous little boy Bryce who turns 3 in December 2009. We just moved to Utah in September 2009 because I decided to take a job transfer to Hill Air Force Base. We didn't live together long before we moved here so we're adjusting to a new life away from our family and friends with only each other to depend on. That in itself should make for an interesting story or two on here. I love to cook and I'm always trying to come up with new cooking ideas. I'm notorious for taking a recipe and modifying it with my own touches or taking a few different recipes and combining them into something. Most of the time they turn out pretty good, but I've had more than my share that haven't turned out at all. I look forward to getting to know all of you and a little about myself in this whole process!
